Teff, the ancestral grain of Ethiopia, is a gluten-free grain. Injera in the present day, however, is typically made with a slightly larger proportion of white flour - including within Ethiopia. At the moment, the restaurant faces staffing issues that make it very difficult to set up and process the separate batch of pure-teff injera. It brought us a lot of satisfaction to serve the traditional gluten-free bread and therefore a greater range of people - we wish we could still do so.
